There's a new trend in the diabetes community: veggie noodles. These are marketed as low carb, low calorie, gluten-free, and tasty pasta substitutes. To see if they live up to the hype, we conducted an experiment with four types of veggie noodles: Zucchini Veggie Spirals, Spaghetti Squash Veggie Spirals, Carrot Veggie Spirals, and Beets Veggie Spirals. We prepared each type with grilled chicken and Alfredo sauce and monitored blood sugar levels 1 hour and 3 hours post-meal.
